Stuffed cheese gratinated capsicums/sweet peppers
250 g minced beef
1 garlic cloves
1 tin baked beans in tomato sauce
2 tbs olive oil
100 g grated cheese
salt and pepper
Tomato and coriander salsa
1 tbs finely chopped onions
1 tbs finely chopped fresh coriander
2 tsp sweet chilli sauce
Gently fry the peeled and finely chopped onion and garlic with the minced beef. Add the beans in tomato sauce and allow to simmer until most of the water has evaporated – 5 minutes. Season to taste with the Tabasco sauce, salt and pepper.
Cut the capsicums in two lengthwise. Remove the stalk and seeds. Heat the Omnia on a relatively low heat and add the olive oil. Fill the capsicums with the meat mix and sprinkle with cheese. Put the capsicums in the food holder and gratinate for approx. 20 minutes on a relatively low heat (turn up the heat for the last few minutes).
Make the salsa while the capsicums are cooking. Chop the tomatoes and mix with the onion and coriander. Season with sweet chilli sauce to taste.
