Parmesan pie

4 portions

Pastry

150 g butter
3–3 ½ dl wheat-flour
½ tsp salt
1 tbs water

Filling

3 eggs
1 ½ dl single cream
1 ½ dl milk
200 g parmesan cheese
salt and pepper

Serve with

Mixed salad
Parma ham
olives

Mix the pastry ingredients and place in a cool place for 20+ minutes.

Grease the Omnia food holder with butter or oil. Place the pastry in the form and press up the sides to form a lining. Bake for 10–15 minutes on a relatively low heat.

Whip the eggs, single cream and milk, add salt and pepper (do not be too generous with the salt as the ham is quite salty). Grate the cheese and put into the pastry lining in the food holder. Pour in the whipped egg mix and bake for 40–50 minutes on a relatively low heat. Remove the Omnia from the heat when the egg mix has set and allow to cool (It is then easier to remove from the Omnia food holder).
