Steamed Sweet Yeast Dumplings 🥟
Germknödel
Ingredients
(makes 4 dumplings)
• 300 g all-purpose flour
• ½ cube fresh yeast (or 1 packet dry yeast)
• 150 ml milk, lukewarm
• 40 g sugar
• 40 g butter, softened
• A pinch of salt
• 1 egg (optional)
• 4–8 tsp plum jam (powidl)
• Melted butter, poppy seeds & sugar to serve
👉 Dissolve yeast in lukewarm milk with sugar. Knead with flour, butter, salt and optional egg into a
soft dough. Cover and let rise for 30–45 minutes.
👉Divide dough into 4 pieces, flatten, fill with plum
jam and seal well. Place seam-side down and rest for 10 minutes.
👉 Grease the Omnia pan and add 3–
4 tablespoons of milk (for steam only). Place dumplings inside with space between them.
👉 Cook on low to medium heat for about 35–40 minutes without opening the lid.
Serve with melted butter and poppy seed sugar! 😍

🥬 Pointed Cabbage with a Parmesan Crust 🧀
Ingredients:
• 1 pointed cabbage
• 250 ml cream
• Salt, pepper, spices to taste
• 80 g grated cheese or parmesan
• 80 g breadcrumbs or panko
• Butter or oil for greasing the Omnia pan
👉Cut the pointed cabbage in half, then into quarters. Arrange evenly in the the non-stick pan (or use a silicone mould/grease the original pan).
👉Season with salt to help soften the cabbage and add a little butter or oil.
👉Let the cabbage braise for about 10 minutes over low heat.
👉Meanwhile, prepare the crust: Mix breadcrumbs or panko with the grated cheese and season with
pepper and spices to taste.
👉After 10 minutes, pour the cream over the cabbage. Sprinkle the breadcrumb-cheese mixture evenly
on top. Cook for another 15–20 minutes over medium to low heat until the cabbage is tender and
the crust is golden brown and crispy✨
