Mac and Cheese
Classic Mac and Cheese is delicious as a side dish, served with a grilled or BBQ main, or on its own with a green salad.
500 g (about 2½ cups) macaroni / about 1 lb macaroni
25 g (about 2 Tbs) butter
50 g (about ¼ cup) plain flour /flour
150 ml (about 2/3 cup) milk / whole milk
150 ml (about 2/3 cup) single cream / heavy cream
1 tsp garlic powder
About 1 tsp salt
½ tsp black pepper
150 g (about ¾ cup) grated cheese
50 g (about ¼ cup) breadcrumbs
Cook the macaroni for one minute less than as directed on the package.
Melt the butter and whisk in the flour until smooth. Whisk in the milk and cream and simmer for a minute or two, stirring constantly until well mixed. Add 100 g (about ½ cup) of the grated cheese and stir until melted. Season with garlic powder and salt and pepper to taste.
Stir the cheese sauce into the macaroni and transfer to the baking pan (greased or lined with the silicone mould).
Sprinkle the rest of the cheese and the breadcrumbs on top.
Bake on high heat for about 20 minutes, until lightly browned.
