(Portuguese Custard Tarts)

Ingredients:
	•	1 sheet puff pastry
	•	400 ml milk
	•	3 eggs (1 whole egg + 2 yolks)
	•	120 g sugar
	•	2 tbsp cornstarch

US Measurements 🇺🇸
Ingredients:
	•	1 sheet puff pastry
	•	1¾ cups milk (400 ml)
	•	3 eggs (1 whole egg + 2 yolks)
	•	½ cup sugar (120 g)
	•	2 tbsp cornstarch

👉 Separate two eggs and place the yolks in a large pot. Add the third egg whole.
Then add the milk, sugar, and cornstarch.

👉 Cook over low heat, stirring constantly, until the mixture thickens into a pudding-like consistency. The pudding is ready once it comes to a brief boil — be careful not to overheat or stop stirring, as this can cause lumps or bits of scrambled egg.

👉 Pour the pudding into a bowl and cover directly with plastic wrap, pressing the wrap onto the surface to prevent a skin from forming.

👉 Now take the puff pastry out of the fridge.
Once the pudding has cooled, unroll the puff pastry and roll it up tightly again lengthwise (without the baking paper inside).

👉 Cut the roll into 12 equal pieces. Flatten each piece into a disc using a potato masher, your palm, or a rolling pin with a piece of baking paper.

👉 Place the discs into a muffin tin and fill each with 1 tablespoon of the pudding.
Bake for about 25 minutes at high heat, or until golden and slightly caramelized on top.

Enjoy with a dash of cinnamon or powdered sugar if you like! ❤️

🍂 Pumpkin Cake recipe 🍂

• 250 g flour
• 160 g sugar
• 1 packet baking powder
• 2 tsp cinnamon
 • 1 tsp vanilla
• Pinch of salt
• Optional: 1/2 tsp cardamom, 1/4 tsp cloves
• 1 egg / 1 flax egg (makes it fluffier – banana not recommended, I tried and it didn’t work well)
• 250 g pumpkin purée
• 60 ml milk
• 100 ml oil
• 1 tbsp lemon juice
• 1 tbsp apple cider vinegar
Optional glaze:
• 120 g powdered sugar
• 3 tbsp maple syrup
• 1/2 tsp cinnamon
• 2 tbsp water (less water if the glaze shouldn ́t be runny)

US MEASUREMENT 🇺🇸
• 2 cups all-purpose flour (≈ 250 g)
• 3/4 cup sugar (≈ 160 g)
• 1 packet baking powder (≈ 2 1/4 tsp)
• 2 tsp cinnamon
• 1 tsp vanilla extract
• Pinch of salt
• Optional: 1/2 tsp ground cardamom, 1/4 tsp ground cloves
• 1 large egg / 1 flax egg
• 1 cup pumpkin purée (≈ 250 g)
• 1/4 cup milk (≈ 60 ml)
• 1/2 cup oil (≈ 100 ml)
• 1 tbsp lemon juice
• 1 tbsp apple cider vinegar

Optional Glaze:
• 1 cup powdered sugar (≈ 120 g)
• 3 tbsp maple syrup
• 1/2 tsp cinnamon
• 2 tbsp water (adjust for desired consistency)

👉In a mixing bowl, combine flour, sugar, baking powder, cinnamon, vanilla, and salt.
👉In a measuring cup, whisk together oil, milk, lemon juice, apple cider vinegar, and the (flax) egg. Pour into the dry ingredients, add the pumpkin purée and mix until you have a smooth batter.
👉Pour the batter into the Omnia silicone mold. Bake on high flame for 10 minutes, then reduce to medium-low heat and bake for another 40 minutes or so (check with a toothpick – the cake needs to be fully baked, otherwise it will collapse).
👉Let the cake cool completely in the mold.
👉For the glaze: sift powdered sugar and mix with the other ingredients until smooth. Spread over the cooled cake.
