Almond and coconut muffins

Ingredients

2 eggs
¼ cup (45 g) granulated sugar
1 cup (120 g) almond flour
½ cup (35 g) grated coconut
¼ cup (50 ml) vanilla curd
1 tsp vanilla sugar
1 tsp baking powder
½ cup (30 g) almond flakes

Butter for muffin tin

Method

  1. Grease the muffin tin and place in the Omnia mold.
  2. Beat the eggs and sugar until fluffy. Add the almond flour, coconut, curd, vanilla sugar, and baking powder and mix into a smooth batter. Divide the batter evenly into the muffin tin. Top with the almond flakes.
  3. Bake on the lowest heat for about 25 minutes. Test with a toothpick to check that the muffins are cooked in the middle. Turn off the heat and leave covered for around 5 minutes. Allow to cool before serving.
