Hashbrown muffins with bacon and eggs

Ingredients

5 oz (150 g) bacon
4 medium floury potatoes
3 eggs
4 tbsp crème fraiche
1 tsp garlic powder
1 tsp smoked paprika powder
2 pinches freshly ground black pepper
1 cup + ½ cup (80 g + 40 g) grated, punchy cheese

Method

  1. Place the muffin tin in the Omnia mold. Fry the bacon slices until crispy. Allow to cool. Peel the potatoes and grate coarsely using a grater.
  2. Whisk the eggs with the crème fraiche, spices, and 1 cup (80 g) of grated cheese. Mix with the grated potato and crumble in the bacon slices.
  3. Distribute in the muffin tin. Top with the rest of the cheese. Cook on the lowest heat for about 30 minutes.
