Salsiccia and pickled red onion pizza

This recipe requires Omnia® Stovetop Pizza Oven

  • 4 small pizzas

Salsiccia sausage meat and quick-pickled red onion come together on a pizza that balances hearty
richness with tangy freshness.

Ingredients

1 pizza dough
100 g crème fraîche (about 100 ml)
50 g grated Parmesan (about 100 ml)
1 garlic clove
150 g salsiccia sausage meat
salt
freshly ground black pepper
a few sprigs of parsley

Pickled Onion
1 red onion
3 tbsp water
2 tbsp apple cider vinegar
1 tbsp sugar

Our recipes are based on being prepared in an Omnia® Classic Original 2L. Omnia® Classic Maxi 3L is 50 percent larger. Therefore, in most recipes, you can increase the amount by half to double the batch. Start by increasing by half a batch only for recipes where the ingredients will rise in the pan during cooking. The cooking times are the same.

Method

  1. Mix the crème fraîche with Parmesan and pressed garlic. Season with salt and black pepper.
  2. Peel and thinly slice the red onion. Combine water, vinegar, and sugar in a bowl. Add the onion and let sit for at least 10 minutes.
  3. Divide the dough into four equal balls. Press them out into round pizzas on a floured surface.
  4. Spread the crème fraîche mixture on the pizzas. Distribute small pieces of the salsiccia meat on top — no need to cook it beforehand.
  5. Place the pizza oven with tray and lid on a heat source, such as a gas stove. Preheat the oven for about 5 minutes before adding the first pizza.
  6. Bake the pizzas one at a time for 8–10 minutes, until golden with a crispy base.
  7. Finish with pickled red onion and parsley leaves.
